Curried Pumpkin Mushroom Soup

Ingredients

  • 1/2 pound fresh mushrooms sliced

  • 1/2 cup chopped onion (or more)

  • 2 Tablespoons butter

  • 2 Tablespoons all purpose flour

  • 1/2 to 1 teaspoon curry powder

  • 1 can pumpkin (15 ounces)

  • 3 Cups chicken broth

  • 4 ounces milk

  • 8 ounces sour cream

  • 2 Tablespoons honey

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon nutmeg

  • Additional sour cream and chives (optional)

Directions

  1. Saute mushrooms and onion in butter.

  2. Stir in flour and curry powder.

  3. Gradually add chicken broth.

  4. Bring to a boil and cook and stir 2 minutes, or until thick.

  5. Reduce heat and add pumpkin, milk, sour cream, honey, salt, pepper, and nutmeg and heat through.

  6. Garnish with sour cream and chives (optional)
